These Coraline Cheesecake Cookies are a fun, colorful dessert inspired by the eerie blue-and-purple world of Coraline. Each cookie is made with swirled blue and purple dough, filled with a creamy black cheesecake center, and finished with navy and purple chocolate drizzle plus bright yellow star sprinkles.

The contrast is what makes them so eye-catching. The outside is vibrant and whimsical, while the inside hides a dark cheesecake filling that feels perfectly suited to a spooky-season dessert. The dough is soft and thick, with cornstarch to help keep the cookies tender, and the frozen cheesecake center stays creamy after baking instead of disappearing into the dough.

These cookies are especially good for Halloween parties, movie nights, themed dessert tables, or anytime you want a stuffed cookie that looks dramatic without requiring complicated decorating.
Why You Will Love These Coraline Cheesecake Cookies
The biggest appeal is the combination of color, texture, and surprise. You get two brightly colored cookie doughs swirled together, a creamy cheesecake center hidden inside, mini chocolate chips throughout, and a decorative drizzle that makes each cookie look different.

They are also easy to prepare ahead. The cheesecake filling can be frozen well in advance, and the cookie dough can be mixed and chilled before assembly. That makes the final baking process much easier, especially if you are preparing several batches for a party.

Ingredient Notes

Use full-fat block cream cheese for the filling. Spreadable cream cheese is usually softer and may not freeze firmly enough, which can cause the center to leak during baking.

Gel food coloring is strongly recommended. It produces a much more vivid blue, purple, and black without adding too much liquid to the dough or cheesecake mixture.

Cornstarch helps create a softer cookie texture and can also reduce excessive spreading. Mini chocolate chips work especially well here because they distribute evenly without making the dough difficult to wrap around the cheesecake center.

How to Make Coraline Cheesecake Cookies

Step 1 – Make the Cheesecake Filling

Add the softened cream cheese, powdered sugar, granulated sugar, vanilla, and black gel food coloring to a bowl. Mix until completely smooth and evenly colored.

The mixture should be thick and creamy. Add enough black food coloring to create a deep charcoal-black center.

Scoop the filling into small balls, about 1 to 1Β½ teaspoons each, and place them on a parchment-lined tray. Freeze until completely firm, preferably for at least 2–3 hours. Overnight works even better.

Step 2 – Make the Blue Cookie Dough

In a large bowl, cream the softened butter, granulated sugar, and brown sugar until smooth and creamy. Add the egg and vanilla and mix until combined.

Add blue gel food coloring until the dough has a bold, saturated color.

In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Add the dry ingredients to the butter mixture and mix only until a dough forms.

Fold in mini chocolate chips.

Step 3 – Make the Purple Cookie Dough

Repeat the exact same process using purple gel food coloring.

Keep the two doughs separate until assembly so the colors remain distinct.

How to Create the Blue and Purple Swirl

Take a small portion of blue dough and a similar amount of purple dough. Gently press the two together, then twist or fold once or twice.

Do not overmix them.

You want visible streaks of both colors instead of one blended color.

Flatten the swirled dough into a thick disk in your hand.

Stuff the Cookies

Take one frozen cheesecake ball from the freezer and place it in the center of the flattened dough.

Bring the dough up around the filling and pinch the seams closed completely.

Roll gently between your palms to form a ball while keeping some of the blue and purple marbling visible.

Repeat with the remaining dough and filling.

Place the assembled cookies on a parchment-lined tray and refrigerate for 15–20 minutes.

This short chill helps the cookies hold their shape and reduces spreading.

Bake the Cookies

Preheat the oven to 375Β°F (190Β°C).

Arrange the chilled cookies on a parchment-lined baking sheet, leaving plenty of room between them.

Bake for 10–12 minutes, or until the edges look set while the centers remain slightly soft.
