Heavy Cream
Use heavy cream or heavy whipping cream with a high fat content.
The fat and milk proteins are essential for creating the smooth set texture.
Lower-fat milk or half-and-half will not give the same result.
Granulated Sugar
Sugar balances the acidity of the lemon and helps give the cream a silky texture.
You can adjust the sweetness slightly, but reducing it dramatically may change the texture and balance.
Lemon Juice
Use freshly squeezed lemon juice.
Its acidity is what causes the cream mixture to thicken.
Lemon Zest
Zest adds intense lemon aroma without adding extra acidity.
Only grate the yellow outer layer and avoid the bitter white pith.
Vanilla
Vanilla is optional in a traditional posset, but it softens the sharp citrus flavor and gives the dessert a more rounded finish.
How to Make Lemon Posset Brûlée
Step 1 – Prepare the Lemon Shells
Choose large lemons with firm, thick skin.
Slice them in half lengthwise or crosswise, depending on your preferred presentation.
Insert a spoon carefully between the flesh and the peel.
Work the spoon around the inside until the flesh releases.
Remove the fruit and reserve it for juicing.
Try not to puncture the peel.
Place the empty lemon shells in a muffin pan, small bowls, or a tray so they remain upright.
Step 2 – Juice the Lemons
Squeeze the reserved lemon flesh and additional lemons as needed.
Strain the juice to remove seeds and excess pulp.
Measure out the amount required for the recipe.
Step 3 – Heat the Cream
Add the heavy cream, sugar, and lemon zest to a medium saucepan.
Place over medium-low heat.
Stir continuously or very frequently while the cream heats.
Bring it close to a gentle simmer but avoid a hard boil.
