  • 6 tablespoons (85g) melted unsalted butter
  • 1 tablespoon cinnamon

Cheesecake

  • 680g full-fat cream cheese
  • 1 cup (200g) granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 3 large eggs
  • ½ cup (120g) Greek yogurt or sour cream

Pumpkin Portion

  • ¾ cup (180g) pumpkin purée
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 tablespoon (12g) brown sugar

Instructions

  1. Preheat oven to 325°F (165°C) and line a 9 x 9-inch pan with parchment.
  2. Mix graham cracker crumbs, cinnamon, and melted butter.
  3. Press firmly into the pan and chill.
  4. Beat cream cheese and sugar until smooth.
  5. Mix in vanilla, cinnamon, salt, and Greek yogurt.
  6. Add eggs one at a time, mixing gently.
  7. Divide the cheesecake batter in half.
  8. Add pumpkin purée, cinnamon, nutmeg, and brown sugar to one half.
  9. Reserve small amounts of both batters for decorating.
  10. Spoon pumpkin and vanilla batters alternately over the crust.
  11. Swirl gently.
  12. Create ghost shapes with reserved pumpkin and vanilla batter if desired.
  13. Bake for 30–40 minutes, until edges are set and the center has a slight jiggle.
  14. Turn off the oven and crack the door open for 1 hour.

  17. Slice with a warm, clean knife.

Notes

Use full-fat block cream cheese and room-temperature ingredients. Do not overmix after adding the eggs. Keep the pumpkin and vanilla swirls distinct by swirling only a few times. The cheesecake should still jiggle slightly when the oven is turned off. Chill overnight for the smoothest texture and cleanest slices.
